Watermelon Bellini

Description

The original Bellini was one-third white peach puree, and two-thirds champagne. This is an equally simple blend of two ingredients – pureed watermelon, and sparkling apple cider.


Ingredients

  • Pureed watermelon slices
  • Sparkling apple cider

Instructions

  • Keep one slice of watermelon aside as a garnish.
  • Blend a few slices of watermelon in a blender.
  • Fill the bottom third of the glass with the watermelon.
  • Top with sparkling apple cider.
  • Garnish

I often add the garnish first, to minimise the mess. Then top the glass with apple cider. Easy!

This is lovely and refreshing. Exactly as you’d expect – sweet and bubbly. Great for a summer evening.

I made this a second time, and overdosed on the watermelon at the bottom. The flavour can be overwhelming, so definitely keep the watermelon under a third – a quarter may be better.
