Description
The original Bellini was one-third white peach puree, and two-thirds champagne. This is an equally simple blend of two ingredients – pureed watermelon, and sparkling apple cider.
Ingredients
- Pureed watermelon slices
- Sparkling apple cider
Instructions
- Keep one slice of watermelon aside as a garnish.
- Blend a few slices of watermelon in a blender.
- Fill the bottom third of the glass with the watermelon.
- Top with sparkling apple cider.
- Garnish

After blending the watermelon, add around one-third to the bottom of each glass.
The angle of this photograph makes it look less than it actually was.
I often add the garnish first, to minimise the mess. Then top the glass with apple cider. Easy!

This is lovely and refreshing. Exactly as you’d expect – sweet and bubbly. Great for a summer evening.
I made this a second time, and overdosed on the watermelon at the bottom. The flavour can be overwhelming, so definitely keep the watermelon under a third – a quarter may be better.
