A thick, refreshing, flavoursome, creamy mocktail. Perfect for summer by the pool.
- 120ml coconut cream
- 3 slices pineapple
- a dash of agave syrup
- Half cup of ice
- shredded coconut to garnish
- Throw the coconut cream, pineapple, syrup and ice into a gutsy blender and blend until smooth
- Pour into glass and garnish with shredded coconut
There are so many variations on this recipe, it was a toss of the coin as to which one to start from. Most used coconut milk and pineapple juice for a light effect, but I think the ice has the same effect, and cools it down even further.
The shredded coconut garnish was a little distracting, when drinking from the glass, but the straw would have fixed that. Mind you, Millie said the garnish was the best part, so it’s definitely got to stay, even if it’s just for the looks.
