I’m in love. This is the best watermelon mocktail of all. Beautifully balanced with lime and agave syrup. Forget the rest.
This was the first time in my life I’d had agave nectar, and the combination with lime and watermelon was mind-blowing.
I think I’ll have to remake all of my mocktails with lime and honey, purely for the taste sensation. Agua fresca land, here we come.
Such simple ingredients. I admit I made three different watermelon mocktails today, and each time gave my son a taste. He agrees. This is completely the winner.
In my first attempt, not knowing what agua frescas actually were (still water and fruit blends), I butchered it by using soda water. This really wasn’t necessary – the flavour was awesome enough to not need a bubbly boost.
The original recipe uses sugar and jalapenos, but I’m currently experimenting with honey mocktails, and didn’t have any jalapenos hanging around. The dash of tabasco added a hint of spice, that paired fantastically with a spicy nando’s chicken – even though it was only supposed to be a mild one.
This was pretty nice – an excellent drink for a summer evening.
Here are the starting ingredients for making a single drink.
Here is the cup of watermelon, before blending everything together.
It really is best to stir the lime juice and honey together first, before throwing everything into the blender, to make sure everything mixes together well. And yes you will get a frothy head, that you’d strain if you were working in a bar.
The original Bellini was one-third white peach puree, and two-thirds champagne. This is an equally simple blend of two ingredients – pureed watermelon, and sparkling apple cider.
Ingredients
Pureed watermelon slices
Sparkling apple cider
Instructions
Keep one slice of watermelon aside as a garnish.
Blend a few slices of watermelon in a blender.
Fill the bottom third of the glass with the watermelon.
Top with sparkling apple cider.
Garnish
Keywords: watermelon bellini mocktail
After blending the watermelon, add around one-third to the bottom of each glass.
The angle of this photograph makes it look less than it actually was.
I often add the garnish first, to minimise the mess. Then top the glass with apple cider. Easy!
This is lovely and refreshing. Exactly as you’d expect – sweet and bubbly. Great for a summer evening.
I made this a second time, and overdosed on the watermelon at the bottom. The flavour can be overwhelming, so definitely keep the watermelon under a third – a quarter may be better.
Watermelon, crushed ice, apple juice and lemonade. This redefines cool.
Ingredients
5 bite-sized pieces of watermelon
60ml apple juice
90ml lemonade
crushed ice
Instructions
Blend watermelon and half a cup crushed ice until smooth
Pour into highball glass and top up with the apple juice and lemonade
My poor blender didn’t cope with watermelon and huge cubes of ice, so I took to the ice with my trusty hammer. In a plastic bag. Then blended the watermelon and ice again, lightly.
This one really benefits from the lemonade. So if your tall glass is looking a little empty, feel free to top it up with more lemonade.
Any drink with ice still in it, works for me in summer. This really is refreshing. Enjoy!
