Includes my perennial favourite raspberry cranberry juice – always in my fridge, with berries, lime and mint.
Ingredients

1.5 litres raspberry cranberry juice
750ml soda water
60ml cup lime juice
1 punnet raspberries
1 punnet blueberries or strawberries
1 cup mint leaves
1 lime, thinly sliced
crushed ice
Instructions
Mix cranberry juice, soda water, lime juice, berries, mint leaves and lime slices together in punchbowl or jug.
Half fill glass with crushed ice.
Fill glass with punch and stir

The best thing about this drink is that it’s a punch.
That means lots of lovely fruit at the bottom when you’ve finished. As you get close to the end, the flavour gets more intense – particularly the lime and the raspberries. And rather than let them go to waste, keep a long skewer handy so you can spear the berries.
Again, you can make a cut down version for 1:
1 lime
Handful of berries and mint leaves
About 125ml raspberry cranberry juice
About 125ml soda water
Ice cubes
I used frozen raspberries and some blueberries and strawberries that really needed using up.
Mint leaves are growing nicely in my garden – the possum has been ignoring them lately.
And I cut a slice of lime for decoration, then juiced the rest.
Stir and serve. Another great recipe that didn’t need any special preparation.
