Originally this was going to be a Grenadine Lime Rickey, until I found a lovely recipe at Saveur.  Pure and simple, with lovely muddled wedges of lime at the base. A classic.
There’s also a great history of the significance of the Lime Rickey during prohibition at  They’re right – a Lime Rickey is the closest thing to an adult drink, without alcohol. The tang of the lime – it really is air conditioning in a glass.


  • 1/2 lime, cut into quarters
  • 30ml lime juice
  • 2 1/2 tablespoons castor sugar
  • 250 ml soda water


  • I got by with 1 lime for this recipe.
  • The first half, was quartered again, ready for muddling.
  • The second half was juiced and just managed to generate 30ml juice.
  • Add the lime quarters and the castor sugar to a tall glass.
  • Muddle with a wooden spoon or muddler, until the lime is crushed, and the sugar dissolving.
  • Fill the glass with ice.
  • Top with soda water.
  • Stir a little with a straw or spoon.
