Pretty in pink, there are a gazillion variations of the Lime Rickey, adding raspberries, blueberries, or in this case, grenadine.

Ingredients

  • 30ml grenadine
  • 10ml lime juice
  • soda water
  • ice

Instructions

  • Half fill a tall glass with ice
  • Pour grenadine first
  • Add lime juice
  • Top with soda water
  • Stir slightly
  • Garnish with lime wedge

Real grenadine is a syrup made from pomegranate seeds, most famous as the colouring in a tequila sunrise or shirley temple. These days there are many imitations, based around corn syrup and blackcurrant, but they all add a definite sweetness as well as colour.

As sugar isn’t added separately, the grenadine rickey really needs the grenadine to add flavour, especially if you were accidentally light on the lime…. So don’t leave the grenadine at the bottom, and be generous with the lime. Stir it, before you garnish and serve with a straw.

It’s a pretty drink, and simple to make. I made this the same night as the cranberry lime rickey, and have to say that I preferred the cranberry version, with the extra juice.
