Description

This was version 1. It needs a lot of rework/practice before I would share it. It looks like a kindergarten version of what it should really look like.

I wanted to make a frozen coconut/lime/lychee mocktail, similar to one I’d had at a restaurant recently. There was a lovely recipe from Coles (https://www.coles.com.au/recipes-inspiration/recipes/frozen-coconut-and-lychee-mocktail) – but it needed overnight preparation to freeze a lychee base – ain’t nobody got time for that. So I went hunting for another one and found https://heartfultable.com/lychee-mocktail, and modified it based on the ingredients I had. Badly.

It was ok. But you had to be in the mood for a creamy mocktail. Possibly not suited to a hot January afternoon.

The things I would do differently:
– Everything should be very chilled! – especially the coconut milk, water
– Add more lime and lychees
– Make lots and lots and lots of crushed ice (smashing it will be fine – the nutribullet didn’t quite do the job, leaving large lumps of ice) –  this will also cool and dilute the drink
– Use dessicated coconut, not shredded or flakes
– Cut the lime slice finer.


Ingredients

Scale
  • 8 fresh lychees
  • 1 cup coconut milk (chilled)
  • 1 cup water (chilled)
  • 60ml fresh lime juice
  • 30ml agave syrup
  • coconut flakes to garnish
  • lime wedge for the rim and zest

Instructions

  1. Blend all ingredients until smooth
  2. Moisten rim of glasses with lime wedge
  3. Dip the glasses onto a plate of coconut and lime zest
  4. Half fill glasses with crushed ice
  5. Pour in blended mocktail ingredients
  6. Garnish with slice of lime
